Couples Resorts Recipe Time: Escoveitch Fish

Thursday, May 15, 2014

Escoveitch Fish is a traditional Jamaican dish that is enjoyed by both locals and foreigners. The style of cooking originated in Europe/Mediterranean where it was known as ‘Escabeche’ and was then brought to Jamaica by the Spaniard. The dish can be described as being pickled since pickling was a great way of keeping food from spoiling in the days of no refrigeration. It is similar to a ceviche with the difference being that the fish is fried and not raw and served with bammy more times than not. As the mecca of first class cuisine, Couples Resorts shares this simple, but tasty Jamaican recipe with you below. Note that Red snapper, mullet, king fish, other firm-bodied fish and even the deadly Lion Fish can be used successfully in this spicy recipe.
